Resep Gulai Kepala Kakap Khas Padang

Cara membuat resep gulai kepala kakap :
Pertama kita ambil kepala ikan yang sudah kita bersihkan sebelumnya,
lalu kita lumuri secara merata dengan air jeruk nipis. Jika sudah, kita
diamkan selama 15 menit supaya bau amisnya hilang.
Setelah itu kita panaskan minyak goreng secukupnya pada wajan, kemudian kita masukkan bumbu yang telah dihaluskan seperti serai, lengkuas, daun jeruk dan juga garam secukupnya.
Apabila baunya sudah agak harum, maka baru kita masukkan santan dan lanjut dimasak sampai mendidih. Tapi jangan lupa ketika masak, pastikan terus di aduk supaya santannya tidak pecah.
Jika sudah mendidih, bisa langsung kita masukkan kepala ikan kakap dengan menggunakan api kecil. Tujuannya agar kepala matang dan bumbu meresap sempurna. Terus aduk sampai benar-benar matang secara menyeluruh.
Makanan siap untuk disajikan di mangkuk saji.
Setelah itu kita panaskan minyak goreng secukupnya pada wajan, kemudian kita masukkan bumbu yang telah dihaluskan seperti serai, lengkuas, daun jeruk dan juga garam secukupnya.
Apabila baunya sudah agak harum, maka baru kita masukkan santan dan lanjut dimasak sampai mendidih. Tapi jangan lupa ketika masak, pastikan terus di aduk supaya santannya tidak pecah.

- 250 gram ikan kakap fillet yang dipotong kotak

Pertama kita lumuri potongan ikan tadi dengan air jeruk lemon dan

menit lagi agar bumbu meresap ke daging.
Berikutnya kita panaskan minyak goreng, sambil menunggu minyak panas, kita guling-gulingkan ikan pada tepung kemudian kita celupkan ikan dalam minyak yang sudah panas hingga warnanya berubah menjadi kecokelatan, angkat dan tiriskan.
Untuk sausnya : kita campurkan semua bahan saus menjadi satu, kemudian kita aduk secara merata.
Selanjutnya kita susun ikan goreng tepung tersebut pada piring saji lengkap dengan saus dan pelengkapnya.
Berikutnya kita panaskan minyak goreng, sambil menunggu minyak panas, kita guling-gulingkan ikan pada tepung kemudian kita celupkan ikan dalam minyak yang sudah panas hingga warnanya berubah menjadi kecokelatan, angkat dan tiriskan.
Untuk sausnya : kita campurkan semua bahan saus menjadi satu, kemudian kita aduk secara merata.

- 900 gram ikan kakap fillet yang di iris panjang (2 ekor)
- 1 sdt garam
- 3 cm jahe parut
- 1 sdt air jeruk lemon
- Setengah sdt merica bubuk
- Minyak goreng secukupnya
Bahan pelapis :
- 20 gram tepung maizena
- 100 gram tepung beras
- Setengah sdt garam
- Setengah sdt kaldu ayam bubuk
- Seperempat sdt merica bubuk
Bahan untuk saus asam manis :
- 100 gram kacang polong
- 500 ml air
- 150 gram saus tomat
- 50 gram mentimun jepang yang dipotong korek api
- 50 gram wortel dipotong korek api

- 1 sdm kecap inggris
- 1 sdm minyak untuk menumis
- 2 sdt tepung sagu serta 1 sdm air, dilarutkan

- 500 gram terigu
- 100 gram gula pasir manis
- 2 butir telur ayam
- 1 sdt ragi instan
- Setengah sdt garam
- Setengah sdt soda kue
Bahan-bahan pelengkap martabak manis :
- Mentega
- Keju secukupnya
- Susu kental manis
- Meses secukupnya
- Kacang tanah yang telah di sangrai tumbuk
Cara membuat resep martabak manis :
Pertama kita campurkan keseluruhan bahan tersebut kecuali soda kue.
Kemudian kita aduk merata sampai adonan halus dan kita diamkan selama kurang lebih 1 jam.
Lalu campurkan soda kue dan adonan sudah siap digunakan.
Setelah itu kita ambil loyang untuk martabak dengan ukuran besar atau menyesuaikan porsi yang akan kita buat.
Berikutnya kita panaskan loyang di atas api dan kita olesi dengan margarin. Jika sudah panas, kita tuangkan adonan ke atas loyang sebanyak 3/4 bagian dan bairkan sebentar untuk proses pemanggangan.
Sekarang tunggu hingga adonan memunculkan lubang-lubang, lalu kita tutup sebentar. Apabila dirasa sudah matang maka bisa kita taburi dengan gula pasir sedikit demi sedikit dan kita tutup kembali. Tunggu hingga benar-benar matang.
Yang terakhir kita keluarkan martabak dari loyang dan bisa langsung kita olesi dengan topping sesuai dengan selera kita sebagai pelengkapnya dan kita satukan kembali.
Catatan :
Kemudian kita aduk merata sampai adonan halus dan kita diamkan selama kurang lebih 1 jam.
Lalu campurkan soda kue dan adonan sudah siap digunakan.
Setelah itu kita ambil loyang untuk martabak dengan ukuran besar atau menyesuaikan porsi yang akan kita buat.
Berikutnya kita panaskan loyang di atas api dan kita olesi dengan margarin. Jika sudah panas, kita tuangkan adonan ke atas loyang sebanyak 3/4 bagian dan bairkan sebentar untuk proses pemanggangan.
Sekarang tunggu hingga adonan memunculkan lubang-lubang, lalu kita tutup sebentar. Apabila dirasa sudah matang maka bisa kita taburi dengan gula pasir sedikit demi sedikit dan kita tutup kembali. Tunggu hingga benar-benar matang.
Yang terakhir kita keluarkan martabak dari loyang dan bisa langsung kita olesi dengan topping sesuai dengan selera kita sebagai pelengkapnya dan kita satukan kembali.
Catatan :
Porsi di atas bisa dihidangkan untuk 6 orang, adapun dalam proses
pembuatannya total memerlukan waktu kurang lebih 30 menit. Selain itu
kandungan kalori yang terdapat di dalamnya sekitar 245 kalori.
